Bacon and alfredo pasta

Ingredients
1 pint half & half (or heavy whipping cream for more fattening sauce)
3 tablespoons butter
2 heaping tablespoons flour
2 toes garlic, minced
1/3 cup grated parmesan cheese
1/4 cup coarsely chopped parsley
1/2 pound bacon, cooked, drained and cut into bite-size pieces
 
Method
In a medium saucepan, melt butter over medium-low heat. Add garlic and stir-fry for 2 to 3 minutes. Stir in flour until well-blended. Add half & half.
Stir sauce over medium-low heat. Do not allow sauce to boil or stick to bottom of pan. Reduce heat if necessary. Allow sauce to thicken (about 20 minutes), stirring frequently.
When sauce is near desired consistency, add parmesan cheese. Stir to melt cheese for 2 minutes. Remove sauce from heat. Toss in bacon and parsley.
Serve over cooked pasta.

Bacon and cheese muffins

Ingredients
6 slices bacon chopped and fried
3 melted tablespoons butter
handful of chopped fresh chives
2 cups cake flour
2 teaspoons baking powder
pinch of salt
2 tablespoons sugar
2 eggs
1 cup milk
1 cup grated cheddar cheese
 
Method
Heat your oven to 190 Celsius and butter up your muffin tins. You can use cookie papers but the cheese tends to stick to them so buttering the muffin tins is a better option.
After melting the butter, remove from the heat and drop in the chopped chives, mix and set aside to cool slightly. In a bowl add the flour, baking powder, sugar and salt and mix with a spoon slightly. In a separate large bowl add the eggs and milk and give a light whisking, then add the butter and chive mixture, the grated cheese and chopped bacon pieces. Give it a good mix to combine. Add the flour mixture to the egg mixture and stir with a spoon in a folding motion until combined. Fill the muffin tins to 2/3 full, pop into the oven and bake for 20 minutes or so until the tops are golden brown. Remove them from the tins and allow cooling on a wire rack. Variations: substitute chives for corn kernels. Fancy it up: sprinkle a few bacon pieces over the top before going into the oven.

Bacon bits potato bake

Ingredients
500g baby potatoes
12 sausages
125g bacon bits
2 tablespoons olive oil
2 large onions sliced
1 heaped teaspoon crushed garlic
1 tablespoon granular mustard
4 or 5 chives chopped finely
250ml sour cream
 
Method
Boil the potatoes until they are cooked through and tender.
Place the sausages in a pan with water about half way up the sides of the sausages on a high heat and cook until the sausages are firm, remove and slice diagonally about 1cm thick.
In a wok, add the bacon bits and cook until almost crisp, add the onion and garlic and stir fry until the onion is soft, add the sausages and stir fry, tossing from time to time until the sausages are cooked through.Add the chives, mustard and sour cream and toss around until the mixture is well blended and hot.
Serve straight away with a nice warm crisp roll. Perfect weekend food

Bean and sausage dish

Ingredients
250 g dry kidney beans or broad beans
30 ml (2 tbsp) cooking or olive oil
500 g karan beef goulash cubes
250 g chorizo or smoked russian sausages, sliced diagonally
2 medium onions, chopped
1 clove garlic, crushed
2 medium tomatoes, peeled and chopped
125 ml (½ cup) dry red wine
375 ml (1½ cups) beef stock
1 bay leaf
30 ml (2 tbsp) chopped fresh thyme or 10 ml (2 tsp) dried
2 ml (¼ tsp) ground mixed spice
salt and freshly ground black pepper to taste
 
Method
Soak beans overnight. Precook beans, covered in water for about 45 minutes.
2. Heat oil in a large heavy-based saucepan. Add beef cubes and fry until golden brown. Add sausage slices, onions and garlic and fry lightly.
3. Add remaining ingredients and simmer for about 1 hour until beans are tender. Add more water if necessary. Simmer until most of liquid has been absorbed

Braai short ribs

1kg short rib 4 people
Marinate short rib over night in a mix of olive oil tomato sauce and apricot jam
Braai over medium heat and serve with potato salad

Breakfast pancakes

Ingredients
250ml cake flour, 1 egg, 15ml oil, 350ml milk, 2ml baking powder, salt and oil for cooking.
 
Method
Mix flour salt and baking powder in a bowl, beat the egg and milk together in a separate bowl gradually adding the dry ingredients, beating all the time. Beat in oil. Pour a very thin layer and spread around your well greased pan, then turn and cook the other side. To keep warm place on a plate over a sauc ingredients 4 vienna sausages, 6 eggs, 200ml milk, salt pepper, tomato sauce Method Beat eggs, milk, salt, pepper and tomato sauce together. Cut sausages and heat in a pan with a little oil. Add other ingredients and cook till egg has coagulated. Divide between the pancakes and roll, serve hot.
