ERASMUS WORS

This recipe and process was used for the first time in the late 1890’s by our Erasmus Family. Today, as then, we only use the purest and best beef mixed with pork and flavoured with the century old spice mix. Leftovers were a rarity and still are, because, according to family folklore, the wors tasted so ‘vrek lekker’ leftovers just never happened.

After allowing enough time for the spice to do its magic the casing is lightly filled. Only natural casings are used. The wors is then left to settle in a cool place. The texture of the wors is light and juicy.

·         When braaiing Erasmus wors do not go the well done route. Life is so much nicer when juicy!

·         Slower is better than quicker when preparing this natural wors. Remember food is there to salivate and talk over.

·         If not used within two days the wors must be frozen. Remember we do our best not to use colourants or artificial stabilizers, and the wors will darken in colour quicker and become bad if not frozen.

This wors normally maintains its flavour when prepared and frozen/refrigerated. Enjoy!!!
